Golden, tasty and rich Vanilla Cupcakes you don’t want to miss!

My goodness…
The sun is shining right now, even if it is not shining. Weird?!
No, the following Vanilla Cupcakes recipe is just seriously brighten any dark and cold day, everyday, anytime.
Look at this color. So bright and sunny-like, so moist and fluffy…I absolutely love this recipe. There is something about great Vanilla Cupcakes but to actually find a good one is hard and takes many many baking sessions until you found it.

The ultimate Vanilla Cupcake recipe:

Or as Jurassic 5 say it in one of their songs: “We holding onto what’s golden.”
Read on for the recipe, boys and girls :-)

  • Prep Time 10 minutes
  • Baking Time 12-15 minutes
  • Difficulty Easy

For the Vanilla Cupcakes:

  • 1 1/4 cups all purpose flour
  • 1 1/4 teaspoons of baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup sugar
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1/2 teaspoon vinegar
    • 1. Preheat your oven to 350 degrees / 180 G Celsius and prepare your cupcake pan with cupcake liners.
    • 2. Pour together the flour, baking powder, baking soda and salt, set aside.
    • 3. Add 1/2 teaspoon vinegar to the milk and set aside for about 3-5 minutes.
    • 4. In another bowl, add the 2 eggs and mix with handmixer. Now pour in the sugar and continue to mix for a minute.
    • 5. Now add vanilla extract and vegetable oil and mix.
    • 6. On low speed, add half of flour mixture, beat, then add half of milk mixture. Repeat until everything is combined and well mixed. Scrape down sides of the bowl too.
    • 7. Now pour the rather thin batter into your cupcake pan and fill up the cupcake liners 2/3 full.
    • 8. Bake in your preheated oven for about 12-15 minutes, use a toothpick, stick in the center of the cupcake, if it comes out clean, the cupcakes are done.
    • 9. Let cupcakes cool for a couple of minutes before you remove them from the pan. Let cool completely on a plate or wire rack.
    • 10. When completely cooled, you can start frosting them. Why don’t you try my favourite frosting recipe, the ultimate Marshmallow Frosting recipe or the creamcheese frosting.

  7. I am wondering if I could substitute the milk for Goats milk, if it would affect the outcome at all?
    I am baking for someone who has allergies to both Cow’s milk and Soy.
    Next attempt is finding a frosting to make without butter, milk or soy of any kind, HA!

    • Hi there Michelle, ohmy I WISH I could tell you 100% but I am sure if you used Goats milk, the outcome won’t be much different?
      If there are no other choices anyway, why don’t you try it out and let’s HOPE it’s just as tasty? If you try it out, please let me know about the outcome.

    I was wondering if this yummy cupcakes would taste the same, if you freeze them? I need to prepare my second son’s batism and, since I habe two toddlers here, I can’t bake everything fresh, like I would usually do :(

    Did you already try to freeze those?

    • Hi Jenny,
      what you can do is to wrap the cupcakes individually with plastic wrap and put these in plastic freezer bags (make sure to get the excess air out) or airtight containers. You can store them up to a month or even longer. When you get them out, unwrap them once the cuppies are thawed. Note: I have not frozen the vanilla cupcakes yet but I am sure it will work. Why don’t you make a test run?

  20. wow…..deine cupcakes sehen toll aus. Ich backe auch sehr gern und bin immer wieder auf der Suche nach tollen neuen Rezepten. So bin ich auch auf Deine Seite gestoßen. Kann es kaum abwarten einige Deine Rezepte nachzubacken. Mir ist aufgefallen, dass du in Deinem Rezept Essig benuzts. Wird der Cupcake dadurch fluffiger oder wieso braucht man sonst das Essig? Danke schön für Deine Antwort.

    • Hallo Kate,
      das Essig ersetzt die Säure von Buttermilch, sprich Milch + Essig ergibt Buttermilch, ganz salop gesprochen.
      Ja du hast Recht, damit wird der Teig schön fluffig, und man schmeckt das Essig nicht raus.

    i have a question regarding the vinegar, is it a vinegar paste if not then in what form are we suppose to use it in the recipe, and what is the use of vinegar in this recipe what i mean is why has it been used, how des it help in baking???
    and can we skip it if we want to??

      The sugar is granulated sugar.
      The vinegar + milk is the same as when you use buttermilk. So instead you can use buttermilk.
      If you use vinegar, use liquid vinegar.
